This Honey Mustard House Salad with Egg is seriously simple, and seriously tasty. Salads are a staple of my diet this time of year. Something about summer has me craving bushels of fresh veggies and I am happy to oblige! Salads aren’t just great because the pack in the veggies they also make great simple meals when your schedule is jam packed and you don’t have a ton of time for food prep. In college I spent a little time working in a restaurant kitchen and some of those habits I picked up back then still find their way into my kitchen today. While I may not always have time to soak and crisp my lettuce leaves I always take the time to tear my lettuce. by putting in that little extra effort you end up with a nice full bodied salad. I usually opt for homemade dressings however you could always go with a store bought favorite, just make sure to check the ingredients list, you may be surprised how much sugar some of the “healthy” brands pack in. With two eggs and a plate full of greens this salad will keep you fueled up and ready to go! This is my go to when it is almost time to hit the grocery store and there aren’t a whole fridge full of fresh veggies to choose from.
- 3-4 cups fresh torn romaine
- 1 small carrot julienned
- 2 hard boiled eggs
- combine equal parts local honey and dijon mustard
- Assemble salad ingredients
- Top with dressing
